Eating healthy is SO hard! Who agrees with me? It gets even harder when life gets crazy. Today, I wanted to share this easy dinner recipe that I made the other night. I love salmon, but I always have such a hard time preparing it. Please tell me I’m not the only one! BUT GOOD NEWS…This recipe is delicious, healthy, and easy to prepare! Win, win!
Let me start out by saying that I love to cook with cute accessories. How cute is this custom cutting board? Thanks to Groopdealz I was able to get it at a fraction of the cost. Groopdealz is such a cool site! Make sure to check them out.
Foil Baked Salmon Fillet with Asparagus Recipe:
Ingredients:
-2 salmon fillets (about 4 oz each)
-1 tbsp (15ml) olive oil
-Salt and Pepper
-1 tsp dried oregano
-16 asparagus spears
-2 onion slices
-lemon slices to cover salmon
-1 tsp fresh parsley, chopped
Directions:
-Preheat over to 400F.
-In a bowl, mix the salmon fillets with the olive oil, oregano, salt, and pepper.
-Place the asparagus on foil wrap and lay the salmon fillets on top of the asparagus.
-Top each fillet with the lemon slices and top with the onion.
-Before wrapping the foil around the salmon, sprinkle the parsley on top of the fillets.
-Wrap foil around the fillets and place on a baking sheet for 20 minutes in the oven.
